
Ingredients:
- 1 Tbsp Olive oil.
- 1-1/2 cups prepared Rice. (See details Here)
- 1 Tsp Chili Powder.
- 1 Tsp Cumin.
- 1 Tsp Garlic Powder.
- Salt and Pepper to taste.
- Pinch of Cayenne Pepper.
- 1 (14.5 ounce) can red beans with juice.
- 1 (14.5 ounce) can red beans drained.
- 1/2 medium size yellow onion – finely diced.
Directions:
- Sauté onions in 1 tablespoon or more of olive oil with 1 teaspoon minced garlic around 1 minute.
- Add 1 can of beans with liquid
- Using a potato masher, lightly mash the beans in the pan.
- Drain the liquid from the second can of beans and add to the pan.
- Add all seasonings to the bean mixture and stir well.
- Bring the mixture to boil and cook for 5 minutes.
- Add the prepared rice to the bean mixture and toss to mix well.
- Add the olive oil to the mixture and blend together.
- Serve warm.
