Red Beans and Rice

Ingredients:

  • 1 Tbsp Olive oil.
  • 1-1/2 cups prepared Rice. (See details Here)
  • 1 Tsp Chili Powder.
  • 1 Tsp Cumin.
  • 1 Tsp Garlic Powder.
  • Salt and Pepper to taste.
  • Pinch of Cayenne Pepper.
  • 1 (14.5 ounce) can red beans with juice.
  • 1 (14.5 ounce) can red beans drained.
  • 1/2  medium size yellow onion – finely diced.

Directions:

  1. Sauté onions in 1 tablespoon or more of olive oil with 1 teaspoon minced garlic around 1 minute.
  2. Add 1 can of beans with liquid
  3. Using a potato masher, lightly mash the beans in the pan.
  4. Drain the liquid from the second can of beans and add to the pan.
  5. Add all seasonings to the bean mixture and stir well.
  6. Bring the mixture to boil and cook for 5 minutes.
  7. Add the prepared rice to the bean mixture and toss to mix well.
  8. Add the olive oil to the mixture and blend together.
  9. Serve warm.
