
Ingredients:
- 8 Chicken Tenderloins
- 3 Tablespoons EVOO – Divided
- 1 Teaspoon Kinder’s The Blend Seasoning
- 1 Teaspoon Organic Italian Seasoning
- 1 Medium Onion – coursely sliced
- 12 oz. Frozen Sliced Zucchini
- 3 Tablespoons Fire Roasted Tomatoes – diced
- 3 slices – Smoke Flavored Provolone Cheese
Directions:
- Preheat oven to 350° F
- Season Chicken with Kinder’s Seasoning on both sides.
- Add 2 Tablespoons EVOO to a 3.5 qt. Sauté Pan over medium-high heat.
- Brown chicken tenderloins on each side (almost fully cooked)
- Remove Chicken from pan and arrange evenly in a medium baking dish.
- Add 1 Tablespoon EVOO, Onions and Zucchini to a Sauté pan and cook until soft.
- Add diced tomatoes, and Italian Seasoning.
- Cook an additional 2-3 minutes.
- Spread mixture evenly over chicken.
- Top with 3 slices of Smoke Flavored Provolone Cheese.
- Move to preheated oven, reduce heat to 325°F and bake for 30 minutes.
- Remove from oven and allow to rest for 10 minutes before serving.
