Twice Baked Potato chips with Cheese.

Ingredients:

  • 1- medium sized Potato (Baked and refrigerated the night before).
  • Juice from a jar of dill pickles.
  • 1/2 Cup (or to taste) shredded Italian Cheese).
  • Salt to taste.

Directions:

  1. Preheat oven to 400°
  2. Remove the potato from the fridge, and while still very cold, and cut into 1/8” slices.
  3. Place the slices on a sheet pan lined with parchment paper.
  4. Carefully drop 1/4 teaspoon of pickle juice over each slice.
  5. Cover each slice with shredded cheese (to taste)
  6. Place in preheated oven and bake for 5 minutes.
  7. Change oven setting to “broil” and continue baking for 3-4 minutes, or until cheese is nicely browned.
  8. Remove from oven and allow to rest for 10 minutes before serving.
