
Ingredients:
- 1- medium sized Potato (Baked and refrigerated the night before).
- Juice from a jar of dill pickles.
- 1/2 Cup (or to taste) shredded Italian Cheese).
- Salt to taste.
Directions:
- Preheat oven to 400°
- Remove the potato from the fridge, and while still very cold, and cut into 1/8” slices.
- Place the slices on a sheet pan lined with parchment paper.
- Carefully drop 1/4 teaspoon of pickle juice over each slice.
- Cover each slice with shredded cheese (to taste)
- Place in preheated oven and bake for 5 minutes.
- Change oven setting to “broil” and continue baking for 3-4 minutes, or until cheese is nicely browned.
- Remove from oven and allow to rest for 10 minutes before serving.
