
Ingredients:
- 1 (20-oz.) can pineapple tidbits in its own juice
- 1 (21-oz.) can cherry pie filling
- 1/2 teaspoon vanilla extract
- 1/3 pkg. yellow cake mix
- 1/2 stick unsalted butter
Directions:
- Preheat oven to 350°F.
- Lightly grease an 8” x 8” Pyrex glass baking dish with avocado oil.
- Drain and save the juice from the can of pineapple tidbits.
- Place pineapple pieces and cherry pie filling in a bowl; mix together.
- Pour mixture into the prepared baking dish.
- Sprinkle the surface of the filling evenly with the yellow cake mix.
- In the saucepan over low heat, melt butter then mix with vanilla extract and reserved pineapple juice.
- Pour the mixture evenly over the cake mix. Use a spoon to spread the juice mixture across the mix.
- Transfer the baking dish to the middle rack of the oven.
- Bake until the top is golden brown in spots and the filling is bubbling, about 45 minutes.
- Allow to cool and serve.
