Chicken, Cheese Ravioli, and Fire-Roasted Tomato Casserole

Ingredients:

  • 1 package (30 pieces) Frozen Cheese Ravioli – divided
  • 1 lb. Chicken Breast – Fully Cooked and Shredded
  • 1/4 Medium Yellow Onion – diced
  • 1- 14.5 oz can Fire Roasted Diced Tomatoes
  • 1- 14.5 oz can Diced Tomatoes
  • 1- 8 oz. Package of Shredded Mozzarella Cheese – divided
  • 1 teaspoon Kinder’s “The Blend” Seasoning
  • 1 teaspoon Italian Seasoning

Directions:

  • Preheat oven to 400° F
  • Add both cans of tomatoes, the spices, onions, and the shredded chicken to a medium size saucepan over medium-high heat.
  • Bring to a boil and cook for 5 minutes.
  • Lightly coat an 8”x11.5” baking dish with olive oil.
  • Add a spoonful or two of the sauce (just enough to lightly cover the bottom of the dish).
  • Arrange the first layer (15 pieces) of Frozen Ravioli evenly in the bottom of the dish.
  • Using a spoon, cover the ravioli with 1/2 of the sauce.
  • Spread 1/2 (4 oz.) of the mozzarella Cheese over the sauce to complete the base layer
  • Arrange the balance of the Ravioli (15 pieces) over the base layer, and follow with the balance of the sauce.
  • Sprinkle the balance of the cheese over the sauce.
  • Cover tightly with aluminum foil, place in the preheated oven and bake for 20 minutes.
  • Remove foil and continue baking for 25 minutes.
  • Serve immediately.
