
Ingredients:
- 2 medium sized Zucchini – peeled and sliced about 1/8” thick
- 1 large Onion – thinly sliced
- 3 Medium Eggs – beaten
- 1 tablespoon Olive Oil + more as needed
- 1/2 cup Grated Parmesan Cheese
- 1/2 cup Shredded Mozzarella Cheese
- Salt and Pepper to taste
Directions:
- Preheat oven to 375° F
- Lightly coat an (8”x 11.5”) baking dish with olive oil.
- Add Olive Oil and the Onions to a small frying pan and cook over medium heat until the onions become transparent.
- In a small bowl, mix the beaten eggs and Parmesan cheese together well.
- Arrange the Zucchini slices in the bottom of the baking dish.
- Pour the Egg and cheese mixture over the Zucchini.
- Toss to coat.
- Salt and Pepper to taste.
- Spread the onions over mixture in dish and bake about 30 minutes.
- Remove baking dish from oven and sprinkle the mozzarella cheese over the top; return to the oven and bake for 10 additional minutes to melt the cheese.
- Allow to rest for 10 minutes before serving.
