Zucchini and Cheese Casserole

Ingredients:

  • 2 medium sized Zucchini – peeled and sliced about 1/8” thick
  • 1 large Onion – thinly sliced
  • 3 Medium Eggs – beaten
  • 1 tablespoon Olive Oil + more as needed
  • 1/2 cup Grated Parmesan Cheese
  • 1/2 cup Shredded Mozzarella Cheese
  • Salt and Pepper to taste

Directions:

  • Preheat oven to 375° F
  • Lightly coat an (8”x 11.5”) baking dish with olive oil.
  • Add Olive Oil and the Onions to a small frying pan and cook over medium heat until the onions become transparent.
  • In a small bowl, mix the beaten eggs and Parmesan cheese together well.
  • Arrange the Zucchini slices in the bottom of the baking dish.
  • Pour the Egg and cheese mixture over the Zucchini.
  • Toss to coat.
  • Salt and Pepper to taste.
  • Spread the onions over mixture in dish and bake about 30 minutes.
  • Remove baking dish from oven and sprinkle the mozzarella cheese over the top; return to the oven and bake for 10 additional minutes to melt the cheese.
  • Allow to rest for 10 minutes before serving.
