Unstuffed Peppers Soup

Ingredients:

  • 1 – tbsp (or as needed) Avocado Oil
  • 1-pound Lean Ground Turkey
  • 1 Garlic Clove – Minced
  • 1 Onion – diced 
  • 1 Chopped Red Pepper
  • 1 Chopped Green Pepper 
  • 2 – (14.5 ounce), Cans Diced Tomatoes – undrained
  • 1 – (28 ounce), Can Tomato Sauce
  • 1/2 tsp Celtic Sea Salt
  • 1/4 tsp Freshly Ground Black Pepper.
  • 1/2 tsp Italian Seasoning 
  • 1/2 Cup uncooked White Rice
  • 32 oz Chicken Broth
  • Crushed red pepper flakes (to taste) – optional

Directions:

  1. Over medium – high heat, place Oil, Onion, Green and Red Peppers and Garlic in a soup pot.
  2. Cook the onions until they become transparent, then add the Ground Turkey, stirring and chopping until meat is nicely browned. Note: (add a little water if necessary, to prevent the mixture from sticking to the pan),
  3. Reduce heat to Medium, then Stir in the Salt, Pepper, Italian Seasoning and Tomatoes
  4. Continue Stirring over Medium heat for 5 minutes.
  5. Add the Tomato Sauce, Chicken Broth, and Rice, bring to a slight boil and continue cooking until Rice is fully cooked.
  6. Serve immediately.
