Teriyaki Chicken Rice Bowl

Ingredients:

  • 1 tbsp Sesame Oil 
  • 1 lb. Chicken Tenders – cut into bite sized pieces.
  • 1/4 yellow onion – diced
  • 1 tbsp Soy Sauce
  • 3 tbsps Teriyaki Sauce.
  • 1 cup white rice – uncooked.
  • 10 – 12 oz. Broccoli, cut into florets.

For the Teriyaki Sauce:

  • ¼ cup packed light brown sugar
  • ¼ cup soy sauce
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon ground ginger
  • 2 cloves garlic minced
  • 1 tablespoon cornstarch

Directions:

  1. Cook rice according to instructions.
  2. Steam broccoli.
  3. Place Sesame Oil, Onions, Soy Sauce, and Chicken in a 3 quart Sauté pan over medium high heat and cook until Chicken is fully cooked – approximately 10 – 12 minutes.
  4. Stir in the Teriyaki Sauce, cover and allow to simmer for 5 minutes.
  5. Add the Broccoli and toss well.
  6. Serve over Rice.
