
INGREDIENTS:
- 2 Medium Chicken Breasts (Cooked and Shredded)
- 3 Tbsp EVOO (Extra Virgin Olive Oil)
- 1/2 medium onion, finely diced.
- 1/2 Cup Mild Diced Tomatoes with Green Chilies. I used Ro*Tel brand.
- 4-6 ounces Mozzarella Cheese, (shredded)
- I cup petite Diced tomatoes
DIRECTIONS
- Add EVOO and onions to a 2 1/2 – 3 quart “oven safe” sauté pan, and simmer over medium/high and cook until onions the become translucent.
- Arrange frozen Tater Tots over the onions in one layer, covering the bottom of the pan, then cook over medium heat, (stirring frequently), until thawed.
- Once thawed, use a Teflon cooking tool to break all of the tots down until they resemble hash browns, then increase heat to medium/high, and continue cooking until they are nicely browned and begin to crisp. Be careful not to burn.
- Mix the Shredded Chicken, Diced Tomatoes, and Ro*tel together in a saucepan, and cook briefly over medium high heat until all ingredients are hot, then reduce heat and allow to simmer for 5 minutes.
- Remove the chicken and tomato mixture from heat and spread evenly over the Tater Tots.
- Cover with Mozzarella Cheese and place under the broiler until the cheese is melted and begins to brown (2-4 minutes).
