Steak Florentine with Mushrooms over Rice

Ingredients:

  • 2 Teaspoons Sesame Oil 
  • 1 lb. Lean Steak – cut into bite sized pieces
  • 8 oz. White Mushrooms – washed and sliced
  • 2 Teaspoons Soy Sauce
  • 1/2 Yellow Onion – Finely Diced
  • Freshly ground black pepper – to taste
  • 12 cup  finely chopped frozen Spinach
  • 3/4 cup shredded Parmesan Cheese
  • 1 cup white rice – rinsed and uncooked
  • 2 cups water

Directions:

  1. Prepare Rice according to instructions.
  2. Heat Oil in a 3-1/2 quart sauté pan over medium-high heat.
  3. Add Onions, Soy Sauce, pepper, and Steak.
  4. Reduce heat to medium, cover, and cook for about 10 minutes.
  5. Add spinach and mushrooms stirring continuously for another 10 minutes or until Steak and Mushrooms are fully cooked.
  6. Slowly add in the Parmesan Cheese, stirring until well mixed.
  7. Serve warm over Rice.
