Smoked Turkey Sausage (Salsiccia di Tacchino Affumicata) Diavolo Spaghetti Sauce

INGREDIENTS

  • 12 oz. Smoked Turkey Sausage, crumbled
  • 3 tbsp olive oil, divided
  • 1 medium onion, diced
  • 2 garlic cloves
  • 1/8 tsp crushed red pepper (or to taste)
  • 3/4 cup water
  • 1 – 14.5 oz. can diced tomatoes
  • 1 tbsp dry red wine
  • 1/2 tsp dried oregano
  • 1/2 tsp dried parsley
  • 1/4 tsp dried basil
  • 2-4 oz. Prepared Spaghetti

DIRECTIONS

  • Add 1 tbsp olive oil to a large pan and heat over medium heat.
  • Add smoked sausage, and while stirring, cook for 4-5 minutes, or until nicely browned.
  • Add the remaining 2 tablespoon of olive oil, garlic, onion, and crushed red pepper to the pan and cook on medium heat for 2-3 minutes, then add diced tomatoes, wine, water, oregano, and salt, then stir. Cover the pan with a lid to prevent splatter, keeping it open a crack to let steam out.
  • Bring the sauce to a simmer, stirring occasionally, until the sauce has thickened. This will take around 15-20 minutes.
  • Add parsley and basil and stir to combine.
  • Toss prepared spaghetti into the sauce
  • Garnish with grated Parmesan or Romano Cheese and serve.
