Roast Beef with Veggies

Ingredients:

  • 1 1/2 pounds Chuck Roast (grass fed/grass finished)
  • 1 tablespoon Avocado Oil
  • 8-10 Baby Potatoes 
  • 3 Large Carrots, peeled and cut into 1-2 inch pieces
  • 1 – Medium Rib Celery -chopped in half
  • 1 – Medium Yellow Onion, peeled and chopped
  • 1 cup Chicken Broth
  • 1 teaspoon Kinder’s Blend Seasoning
  • 1 tablespoon Ketchup
  • 3 teaspoons Worcestershire Sauce

Directions:

  • Heat oven to 350°F.
  • Heat Avocado oil in a skillet.
  • Add beef and turn to sear on all sides.
  • Remove from heat and transfer to a 9 X 12 baking dish.
  • Add potatoes, carrots, onion, and celery.
  • In a small bowl, mix Worcestershire Sauce, Ketchup, and Chicken Broth and pour over meat and veggies.
  • Cover and roast in oven until beef and potatoes are fork-tender, about 2 1/2 hours.
