
Ingredients:
- 3 cups unbleached all-purpose flour
- 2-3/4 cups granulated sugar
- 1-1/2 tsp. salt
- 2 tsp. baking soda
- 1/2 cup Orange Juice
- 1 cup unsweetened apple sauce
- 4 large eggs, beaten
- 2 tsp. vanilla extract
- 1 – 15 oz. can Pumpkin Purée
- 1 Tbsp Pumpkin Pie Spice
- 1/4 cup pecan pieces – divided
Directions:
- Preheat oven to 350°F.
- Lightly grease and flour 2 – 9”x5” bread pans
- Mix flour, sugar, pumpkin pie spice, baking soda and salt in large bowl.
- Beat eggs in medium bowl. Stir in applesauce, pumpkin, orange juice and vanilla.
- Add to flour mixture; mix but don’t over-mix.
- Divide batter evenly between prepared pans.
- Sprinkle 1/8 cup of the pecans over each loaf.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, (about 65 minutes). Cool on a wire rack for 20 minutes before removing from pans.
- Wrap in foil when completely cooled.
