Pumpkin Bread

Makes 2 loaves

Ingredients:

  • 3 cups unbleached all-purpose flour
  • 2-3/4 cups granulated sugar
  • 1-1/2 tsp. salt
  • 2 tsp. baking soda
  • 1/2 cup Orange Juice
  • 1 cup unsweetened apple sauce
  • 4 large eggs, beaten
  • 2 tsp. vanilla extract
  • 1 – 15 oz. can Pumpkin Purée
  • 1 Tbsp Pumpkin Pie Spice
  • 1/4 cup pecan pieces – divided

Directions:

  • Preheat oven to 350°F. 
  • Lightly grease and flour 2 – 9”x5” bread pans
  • Mix flour, sugar, pumpkin pie spice, baking soda and salt in large bowl.
  • Beat eggs in medium bowl. Stir in applesauce, pumpkin, orange juice and vanilla. 
  • Add to flour mixture; mix but don’t over-mix.
  • Divide batter evenly between prepared pans.
  • Sprinkle 1/8 cup of the pecans over each loaf.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, (about 65 minutes). Cool on a wire rack for 20 minutes before removing from pans.
  • Wrap in foil when completely cooled.
