
Ingredients:
- 6 Chicken Tenderloins
- 4 tablespoons Olive Oil divided
- 1 Medium Yellow Onion – Diced
- 1 tablespoon Italian-Style Seasoned Bread Crumbs
- Salt and Pepper – to taste
- 2 tablespoons low sodium Soy Sauce
- 1/2 bag Potatoes O’Brien
- 1/4 cup shredded Parmesan Cheese
Directions:
- Begin by cutting the Chicken Tenderloins into 3/4” cubes.
- Heat 2 tablespoons oil in a 3 quart sauté pan over medium-high heat.
- Add the Onions, Soy Sauce, and Chicken stirring until meat is fully cooked.
- Remove the Chicken and onions from the pan and set aside.
- Reduce heat to Medium, add the remaining oil, then Stir in the Potatoes
- Continue Stirring over Medium heat until the potatoes are cooked soft (about 5 minutes)
- While the potatoes are cooking, sprinkle the bread crumbs over the Chicken and toss to make sure it’s coated well.
- Add the coated chicken to the potatoes, stir to mix and then transfer to a baking dish
- Add Salt and Pepper to taste
- Cover mixture with cheese – to taste.
- Place in a preheated oven (400 degrees) and bake for 5-10 minutes and Cheese is melted.
