Potatoes O’Brien and Chicken Casserole

Ingredients:

Directions:

  1. Begin by cutting the Chicken Tenderloins into 3/4” cubes.
  2. Heat 2 tablespoons oil in a 3 quart sauté pan over medium-high heat.
  3. Add the Onions, Soy Sauce, and Chicken stirring until meat is fully cooked.
  4. Remove the Chicken and onions from the pan and set aside.
  5. Reduce heat to Medium, add the remaining oil, then Stir in the Potatoes
  6. Continue Stirring over Medium heat until the potatoes are cooked soft (about 5 minutes)
  7. While the potatoes are cooking, sprinkle the bread crumbs over the Chicken and toss to make sure it’s coated well.
  8. Add the coated chicken to the potatoes, stir to mix and then transfer to a baking dish
  9. Add Salt and Pepper to taste
  10. Cover mixture with cheese – to taste.
  11. Place in a preheated oven (400 degrees) and bake for 5-10 minutes and Cheese is melted.
