
Ingredients:
- 1 lb. Lean Steak – Cut into bite size pieces
- 2 teaspoons Sesame Oil
- 1.5 tablespoons Soy Sauce
- 1/2 Cup Low Sodium Broth – divided (I used Chicken broth)
- 1 Medium Onion – diced
- 1/4 each of Green, Yellow, and Red Bell Peppers – diced
- 2 Medium Tomato – cut into wedges
- 1 tablespoon Minced Ginger
- 1/2 teaspoon Freshly Ground black Pepper
- 2 Cloves Garlic -minced
- 2-3 Cups White Rice- prepared (for serving)
Instructions:
- Heat Oil in a skillet over medium heat
- Add Onions, Peppers, and Garlic – cook for 2-3 minutes.
- Add Steak and ground pepper – continue cooking until nicely browned on all sides.
- Add Soy Sauce and 1/4 Cup Broth.
- Cover and Simmer for 15 mins.
- Add more broth if needed.
- Add Tomato Wedges and continue to simmer for 5 minutes – covered.
- Remove from heat and allow to rest for 10- mins.
- Serve over white rice.
