Pepper Steak with Rice

Ingredients:

  • 1 lb. Lean Steak – Cut into bite size pieces
  • 2 teaspoons Sesame Oil
  • 1.5 tablespoons Soy Sauce
  • 1/2 Cup Low Sodium Broth – divided (I used Chicken broth)
  • 1 Medium Onion – diced
  • 1/4 each of Green, Yellow, and Red Bell Peppers – diced
  • 2 Medium Tomato – cut into wedges
  • 1 tablespoon Minced Ginger
  • 1/2 teaspoon Freshly Ground black Pepper
  • 2 Cloves Garlic -minced
  • 2-3 Cups White Rice- prepared (for serving)

Instructions:

  • Heat Oil in a skillet over medium heat
  • Add Onions, Peppers, and Garlic – cook for 2-3 minutes.
  • Add Steak and ground pepper – continue cooking until nicely browned on all sides.
  • Add Soy Sauce and 1/4 Cup Broth.
  • Cover and Simmer for 15 mins.
  • Add more broth if needed.
  • ​Add Tomato Wedges and continue to simmer for 5 minutes – covered.
  • Remove from heat and allow to rest for 10- mins.
  • Serve over white rice.
