Pecan, Banana, and Chocolate (no bake) Energy Bites.

Non-GMO / No sugar added / Makes 10 – 12 servings

Ingredients:

  • 1- Cup Pecan Halves
  • 2 large or 2-1/2 medium size, Fully Ripened, Organic Bananas – mashed
  • 1-3/4 Cup Organic Oats – divided
  • 1/2 Cup Unsweetened Coconut Flakes – divided
  • 1/4 Cup Unsweetened Cocoa Powder
  • 1- tsp Vanilla
  • 8 – Pitted Dates

Directions:

  • Place the Pecans, 1/4 cup Coconut Flakes, Dates, and 1 cup Oats into a food processor and pulse until mixture resembles coarse crumbs.
  • Move the blended mixture to a mixing bowl, add the Bananas, Vanilla, and Cocoa then stir with a fork until mixed well.
  • In a separate bowl, mix the remaining oats and coconut flakes together.
  • Fashion dough by hand into small balls, about 1 to 1-1/4 inches in size.
  • Roll each ball in the coconut/oats mixture before placing onto a plate.
  • Refrigerate uncovered for 45 minutes.
  • Once chilled, move to an airtight container and return to the refrigerator until serving. (Last up to 5 days).
