
Ingredients:
- 1- Cup Pecan Halves
- 2 large or 2-1/2 medium size, Fully Ripened, Organic Bananas – mashed
- 1-3/4 Cup Organic Oats – divided
- 1/2 Cup Unsweetened Coconut Flakes – divided
- 1/4 Cup Unsweetened Cocoa Powder
- 1- tsp Vanilla
- 8 – Pitted Dates
Directions:
- Place the Pecans, 1/4 cup Coconut Flakes, Dates, and 1 cup Oats into a food processor and pulse until mixture resembles coarse crumbs.
- Move the blended mixture to a mixing bowl, add the Bananas, Vanilla, and Cocoa then stir with a fork until mixed well.
- In a separate bowl, mix the remaining oats and coconut flakes together.
- Fashion dough by hand into small balls, about 1 to 1-1/4 inches in size.
- Roll each ball in the coconut/oats mixture before placing onto a plate.
- Refrigerate uncovered for 45 minutes.
- Once chilled, move to an airtight container and return to the refrigerator until serving. (Last up to 5 days).
