
Ingredients:
- 3 tablespoons Extra Virgin Olive Oil
- 1/4 cup Diced Onion
- 5 – 6 Chicken Tenderloins – cut into small pieces (about 1/2”)
- 1-20 oz package Simply Potatoes – thawed
- 1 cup shredded cheese. I used Kraft 4 cheese Mexican Blend
- 2 tablespoons Melted Butter
- 1 tablespoon Soy Sauce
- 1/4 teaspoon Poultry Seasoning
- 1/4 teaspoon Rosemary
- Salt and Pepper to taste
- 1 teaspoon Dried Parsley (optional)
Directions:
- Preheat your oven to 400 degrees.
- Add Olive Oil and Onions to a 3 quart sauté pan over medium heat.
- Add Chicken, Spices, Butter, and Soy Sauce to the pan.
- Cook over medium/high heat until the Chicken is thoroughly cooked.
- Reduce heat to low, and add the potatoes and cheese. Mix well and remove from heat.
- Transfer mixture to a 9”x12” baking dish and spread out to an even layer.
- Bake in preheated oven for 25 minutes, then change oven setting to broil for about 5 minutes (just until edges begin to crisp – but are not burnt)
- Sprinkle Parsley over dish before serving (optional)
