Cheesy Hash Browns with Chicken

Ingredients:

  • 3 tablespoons Extra Virgin Olive Oil 
  • 1/4 cup Diced Onion
  • 5 – 6 Chicken Tenderloins – cut into small pieces (about 1/2”)
  •  1-20 oz package Simply Potatoes – thawed
  • 1 cup shredded cheese. I used Kraft 4 cheese Mexican Blend
  • 2 tablespoons Melted Butter
  • 1 tablespoon Soy Sauce
  • 1/4 teaspoon Poultry Seasoning
  • 1/4 teaspoon Rosemary
  • Salt and Pepper to taste
  • 1 teaspoon Dried Parsley (optional)

Directions:

  1. Preheat your oven to 400 degrees. 
  2. Add Olive Oil and Onions to a 3 quart sauté pan over medium heat.
  3. Add Chicken, Spices, Butter, and Soy Sauce to the pan.
  4. Cook over medium/high heat until the Chicken is thoroughly cooked.
  5. Reduce heat to low, and add the potatoes and cheese. Mix well and remove from heat.
  6. Transfer mixture to a 9”x12” baking dish and spread out to an even layer. 
  7. Bake in preheated oven for 25 minutes, then change oven setting to broil for about 5 minutes (just until edges begin to crisp – but are not burnt)
  8. Sprinkle Parsley over dish before serving (optional)
