
“You can always judge the quality of a cook or a restaurant by roast chicken,” says Julia Child. “It’s a fair point—a good chicken dinner has even been known to lead to a marriage proposal”
Ingredients:
- 1 (4-6 pound) roasting chicken.
- Seasoning blend for chicken.
- 1 small yellow onion (whole).
Directions:
- Preheat the oven to 425 degrees F.
- Remove the giblets, neck, and any excess fat and pat the outside dry.
- Liberally apply the seasoning blend to the outside of the chicken.
- Place the onion inside the cavity, loosely cover legs and wings with foil and place in the preheated oven.
- Roast the chicken for 1 1/2 – 2 hours, or until the internal temperature reads 165 degrees on an instant read thermometer.
- Remove the chicken to a platter and cover with aluminum foil for about 10 minutes before carving.
