Oven Roasted Chicken

“You can always judge the quality of a cook or a restaurant by roast chicken,” says Julia Child. “It’s a fair point—a good chicken dinner has even been known to lead to a marriage proposal”

Ingredients:

  • 1 (4-6 pound) roasting chicken.
  • Seasoning blend for chicken.
  • 1 small yellow onion (whole).

Directions:

  1. Preheat the oven to 425 degrees F.
  2. Remove the giblets, neck, and any excess fat and pat the outside dry.
  3. Liberally apply the seasoning blend to the outside of the chicken.
  4. Place the onion inside the cavity, loosely cover legs and wings with foil and place in the preheated oven.
  5. Roast the chicken for 1 1/2 – 2 hours, or until the internal temperature reads 165 degrees on an instant read thermometer.
  6. Remove the chicken to a platter and cover with aluminum foil for about 10 minutes before carving.
