
Ingredients:
- 3 Eggs
- 1.5 cups Progresso Italian Seasoned Bread Crumbs
- 1 cup all-purpose flour
- 2 boneless skinless chicken breasts, evenly sliced in half
- 3/4 cup butter
Directions:
- Preheat oven to 425 degrees.
- Beat the eggs in a small bowl.
- Mix the coating by combining bread crumbs and flour in a medium size bowl.
- Coat the chicken by dipping each piece in the egg, then pressing it into the breadcrumb mixture.
- Then double coat; dipping the coated chicken in the egg again, and coat again in the bread crumb mixture.
- Add the butter to a Pyrex 9″X13″ Oven-Safe Baking Dish.
- Put the dish in the oven just long enough to melt the butter. (You want the dish to get hot)
- Place each piece of chicken on the butter in the hot dish.
- Bake for 15 minutes, and then carefully flip each piece over.
- Bake for an additional 15-20 minutes, or until the coating is browned and an instant-read meat thermometer inserted into the chicken reaches at least 165°.
