Oven-Fried Chicken

Ingredients:

  • 3 Eggs
  • 1.5 cups Progresso Italian Seasoned Bread Crumbs
  • 1 cup all-purpose flour
  • 2 boneless skinless chicken breasts, evenly sliced in half
  • 3/4 cup butter 

Directions:

  1. Preheat oven to 425 degrees. 
  2. Beat the eggs in a small bowl.
  3. Mix the coating by combining bread crumbs and flour in a medium size bowl.
  4. Coat the chicken by dipping each piece in the egg, then pressing it into the breadcrumb mixture.
  5. Then double coat; dipping the coated chicken in the egg again, and coat again in the bread crumb mixture.
  6. Add the butter to a Pyrex 9″X13″ Oven-Safe Baking Dish.
  7. Put the dish in the oven just long enough to melt the butter. (You want the dish to get hot)
  8. Place each piece of chicken on the butter in the hot dish.
  9. Bake for 15 minutes, and then carefully flip each piece over.
  10. Bake for an additional 15-20 minutes, or until the coating is browned and an instant-read meat thermometer inserted into the chicken reaches at least 165°.
