Pecan, Date, and Coconut Protein Bites (No Bake)

No Sugar Added
Ingredients:

  • 1 cup Dates (pitted)
  • 1 cup Pecans – (chopped)
  • 1/2 cup unsweetened shredded coconut (divided)
  • 1 tbsp vegan cocoa powder
  • 1/4 tsp Almond Extract
  • 1/4 Cup Apple Cider

Directions:

1. Place dates in the food processor and process until they have come together in a ball. 


2. Break up the date ball with your hands and add the Pecans and Apple Cider. Process for a couple minutes, scraping down the sides, until mixture is starting to come together and the Pecans are broken down. 

3. Add in the Almond Extract, 1/4 cup Coconut, and Cocoa, then process until mixture comes together in a ball. 


4. Remove mixture from the food processor and roll into small balls. Roll each ball in remaining 1/4 cup of coconut.

5. Cover and refrigerate for 2-3 hours.

Note – these will firm up in the refrigerator. (keep refrigerated).

The balls will keep well in a sealed container in the fridge for about a week.
