Lemonburst Pie

Rich Lemon Custard Pie Filling.

Ingredients:

  • 1 medium + 1/2 small lemon – carefully seeded and cut into 1” pieces. (Don’t peel it, you’ll blend the whole lemon).
  • 4 large eggs.
  • ½ cup butter, melted.
  • 1 teaspoon vanilla.
  • 1 cup sugar.
  • 1 (9 inch) frozen pie crust, thawed/unbaked.


Directions:

  • Preheat oven to 350°F. 
  • Wash your lemon then cut up, be careful to remove all the seeds.
  • Place lemon pieces in a blender or food processor. I used a Nutri Ninja® Blender.
  • Add the eggs, butter, vanilla, and sugar. Blend until smooth.
  • Pour the mixture into your piecrust.
  • Bake for about 40 minutes or until set.
  • Let cool then, chill in the fridge.
