
Ingredients:
- 1 medium + 1/2 small lemon – carefully seeded and cut into 1” pieces. (Don’t peel it, you’ll blend the whole lemon).
- 4 large eggs.
- ½ cup butter, melted.
- 1 teaspoon vanilla.
- 1 cup sugar.
- 1 (9 inch) frozen pie crust, thawed/unbaked.
Directions:
- Preheat oven to 350°F.
- Wash your lemon then cut up, be careful to remove all the seeds.
- Place lemon pieces in a blender or food processor. I used a Nutri Ninja® Blender.
- Add the eggs, butter, vanilla, and sugar. Blend until smooth.
- Pour the mixture into your piecrust.
- Bake for about 40 minutes or until set.
- Let cool then, chill in the fridge.
