
Ingredients:
- 1 – tbsp Avocado Oil
- 1-pound Lean Ground Turkey
- 2 Garlic Cloves – Minced
- 1 Onion – diced
- 1//2 Chopped Red Pepper
- 1/2 Chopped Green Pepper
- 1 – Medium Chopped Tomato
- 1/2 Cup Grated Parmesan Cheese
- 1/2 tsp Celtic Sea Salt
- 1/4 tsp Freshly Ground Black Pepper.
- 1/2 tsp Italian Seasoning
- 1 Can Cannellini Beans- Drained
- 1/2 Cup Water
- 1/2 Cup Frozen Spinach Leaves
- Crushed red pepper flakes (to taste) – optional
Directions:
- Over medium – high heat, place Oil, Onion, Green and Red Peppers and Garlic in a 3 quart Sauté pan.
- Cook the onions until they become transparent, then add the Ground Turkey, stirring and chopping until meat is nicely browned.
- Reduce heat to Medium, then Stir in the Salt, Pepper, Italian Seasoning.
- Continue Stirring over Medium heat until the turkey is fully cooked (about) five minutes.
- Add the Beans, Water, and Tomatoes – bring to a slight boil and continue cooking for 7 minutes.
- Add the Spinach and Parmesan Cheese and simmer for 3-4 minutes, stirring frequently.
- Cover and remove from heat.
- Let stand for 10 minutes before serving.
