Italian Bean and Ground Turkey Skillet

Ingredients:

  • 1 – tbsp Avocado Oil
  • 1-pound Lean Ground Turkey
  • 2 Garlic Cloves – Minced
  • 1 Onion – diced 
  • 1//2 Chopped Red Pepper
  • 1/2 Chopped Green Pepper 
  • 1 – Medium Chopped Tomato
  • 1/2 Cup Grated Parmesan Cheese
  • 1/2 tsp Celtic Sea Salt
  • 1/4 tsp Freshly Ground Black Pepper.
  • 1/2 tsp Italian Seasoning 
  • 1 Can Cannellini Beans- Drained
  • 1/2 Cup Water
  • 1/2 Cup Frozen Spinach Leaves
  • Crushed red pepper flakes (to taste) – optional

Directions:

  1. Over medium – high heat, place Oil, Onion, Green and Red Peppers and Garlic in a 3 quart Sauté pan.
  2. Cook the onions until they become transparent, then add the Ground Turkey, stirring and chopping until meat is nicely browned.
  3. Reduce heat to Medium, then Stir in the Salt, Pepper, Italian Seasoning.
  4. Continue Stirring over Medium heat until the turkey is fully cooked (about) five minutes.
  5. Add the Beans, Water, and Tomatoes – bring to a slight boil and continue cooking for 7 minutes.
  6. Add the Spinach and Parmesan Cheese and simmer for 3-4 minutes, stirring frequently.
  7. Cover and remove from heat.
  8. Let stand for 10 minutes before serving.
