Ground Turkey and Veggie Patties

Ingredients:

  • 1-pound Lean Ground Turkey.
  • 1/2 Red Bell Pepper – finely chopped
  • 1/2 Large Baking Potato – finely chopped
  • 1/2 small Yellow Onion – Diced.
  • 1/2 tsp each Smoked Paprika, Oregano, Salt, and freshly ground Black Pepper.
  • 1- Large Egg
  • 1 Medium Carrot – finely chopped

Directions:

  • Preheat oven to 375°
  • Place ground turkey in a medium size mixing bowl, and shape into a mound.
  • Then, using your fist, create a crater in the center of the mound.
  • Add all additional ingredients to the crater, and using your hands, mix all of the ingredients together.
  • Shape 4-5 patties from the mixture.
  • Place the patties on a sheet pan lined with parchment paper and put in preheated oven.
  • Bake for 35-40 minutes, turn each pattie over after about 20 minutes.
  • Check patties for doneness using a quick read thermometer (should read 165°) before removing from oven.
