
INGREDIENTS
- 12 ounces of any type of noodles or pasta will work
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves
- 5 tablespoons butter
- 1 lb frozen raw shrimp, peeled and deveined (21-25 ct)
- 1 cup vegetable broth
- Salt and Pepper to taste
- 4 tablespoons grated parmesan cheese
DIRECTIONS
- Cook the noodles according to the package directions. Drain and cover to keep warm.
- Heat the oil in a large skillet or saucepan over medium-high heat.
- Add the garlic and onion, then cook for 2 minutes.
- Add the butter and broth them bring to a simmer.
- Add the Shrimp and cook for about 4 to 5 minutes, with smaller shrimp taking less time and larger ones potentially needing a minute or two longer. The key is to cook them just until they turn opaque, pinkish, and curl into a “C” shape, which indicates they are done.
- Cover, and continue to simmer for about 5 additional minutes
- Fold in the pasta, and Parmesan cheese
- Season to taste with salt and black pepper
- Top with parmesan and parsley, and serve
