Garlic Butter Shrimp with Pasta

INGREDIENTS

  • 12 ounces of any type of noodles or pasta will work
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves
  • 5 tablespoons butter
  • 1 lb frozen raw shrimp, peeled and deveined (21-25 ct)
  • 1 cup vegetable broth
  • Salt and Pepper to taste
  • 4 tablespoons grated parmesan cheese

DIRECTIONS

  • Cook the noodles according to the package directions. Drain and cover to keep warm. 
  • Heat the oil in a large skillet or saucepan over medium-high heat.
  • Add the garlic and onion, then cook for 2 minutes.
  • Add the butter and broth them bring to a simmer.
  • Add the Shrimp and cook for about 4 to 5 minutes, with smaller shrimp taking less time and larger ones potentially needing a minute or two longer. The key is to cook them just until they turn opaque, pinkish, and curl into a “C” shape, which indicates they are done.
  • Cover, and continue to simmer for about 5 additional minutes
  • Fold in the pasta, and Parmesan cheese
  • Season to taste with salt and black pepper
  • Top with parmesan and parsley, and serve
