
INGREDIENTS
- 12 ounces of any type of noodles or pasta will work- I used Farfalle (Italian: [farˈfalle]) a type of pasta commonly known as bow-tie pasta
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves
- 1 large carrot, diced
- 1 rib celery, diced
- 5 tablespoons butter, divided
- 1 large boneless skinless chicken breast, precooked and shredded
- 1 cup chicken broth
- Salt and Pepper to taste
- 4 tablespoons grated parmesan cheese
- 1/2 tsp dried parsley (optional)
DIRECTIONS
- Cook the noodles according to the package directions. Drain and cover to keep warm.
- Heat the oil and 1 tablespoon of the butter together in a large skillet or saucepan over medium-high heat.
- Add the chicken and cook until browned.
- Add the garlic and onion, then cook for 2 minutes.
- Add celery, carrot, and broth, bring to a simmer.
- Reduce the heat to low and simmer for 10 minutes or until the carrots soften.
- Fold in the noodles and remaining butter.
- Season to taste with salt and black pepper.
- Top with parmesan and parsley, and serve.
