Garlic Butter Chicken and Noodles

INGREDIENTS

  • 12 ounces of any type of noodles or pasta will work- I used Farfalle (Italian: [farˈfalle]) a type of pasta commonly known as bow-tie pasta
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves
  • 1 large carrot, diced
  • 1 rib celery, diced
  • 5 tablespoons butter, divided
  • 1 large boneless skinless chicken breast, precooked and shredded
  • 1 cup chicken broth
  • Salt and Pepper to taste
  • 4 tablespoons grated parmesan cheese
  • 1/2 tsp dried parsley (optional)

DIRECTIONS

  • Cook the noodles according to the package directions. Drain and cover to keep warm. 
  • Heat the oil and 1 tablespoon of the butter together in a large skillet or saucepan over medium-high heat.
  • Add the chicken and cook until browned.
  • Add the garlic and onion, then cook for 2 minutes.
  • Add celery, carrot, and broth, bring to a simmer.
  • Reduce the heat to low and simmer for 10 minutes or until the carrots soften.
  • Fold in the noodles and remaining butter.
  • Season to taste with salt and black pepper.
  • Top with parmesan and parsley, and serve.
