
Ingredients:
- 4 Medium Honeycrisp Apples
- 2 tablespoons Semi-Sweet Chocolate Chips
- 5 tablespoons Unsweetened Cocoa Powder
- 1 teaspoon Baking Powder
- 1 teaspoon Vanilla Extract
- 4 Large Eggs, beaten
- 1/8 Cup chopped Pecans – optional
Directions:
- Preheat oven to 350°F.
- Lightly grease a 9”x5” bread pan
- Wash, core, and chop the apples into small pieces, leaving the skin on for extra fiber and nutrients.
- Using a food processor, puree the chopped apples until almost smooth.
- Beat eggs in medium bowl. Stir in Apples, Cocoa, Chocolate Chips, and Vanilla.
- Mix well
- Add batter to the prepared pan.
- Sprinkle 1/8 cup of the pecans over loaf, if desired.
- Bake in the preheated oven for 45 minutes.
- Cool on a wire rack for 20 minutes before removing from pan.
Note: will be very moist
