
Note- these contain very little sugar and therefore are not very sweet. This is a modified version of Russian Tea Cookies.
Ingredients:
- 1-3/4 Cup Coarsely Ground Pecans
- 1-3/4 Cup All Purpose Flour
- 3/4 Cup Unsweetened Applesauce
- 1/4 Cup of Vegetable Oil (melted butter can be substituted for non-vegan version)
- 2 tsp Vanilla
- 3 tbsp White Sugar and 1 tsp Cinnamon – mixed
Directions:
- Preheat Oven to 350 degrees.
- Place the Ground Pecans, and Flour in a mixing bowl and use a whisk to blend together well.
- In a separate bowl, mix the Applesauce, Oil and Vanilla together.
- Blend the wet ingredients into the dry ingredients and stir with a fork until mixed well.
- Fashion dough by hand into small balls, about 1” to 1-1/4 inches in size.
- Roll each ball in the Sugar-Cinnamon mixture before placing onto parchment-lined baking sheet.
- Bake for 30 minutes.
- Allow to cool completely before removing to a serving plate.
