Chocolate-Pecan Protein Bites (Gluten Free).

Makes 13 – 1” protein bites.


Ingredients:

  • 2 Cups Coarsely Ground Pecans
  • 2 Cups Almond Flour
  • 1/2 Cup Unsweetened Applesauce
  • 1/2 Cup melted butter
  • 1 tbsp Dark Chocolate – Melted
  • 1 tsp Vanilla Extract
  • 2 tsps Almond Extract
  • 1/2 Cup White Sugar

Directions:

  • Preheat Oven to 350 degrees.
  • Place the Ground Pecans, Sugar, and Flour in a mixing bowl and use whisk to blend together well.
  • In a separate bowl, mix the Melted Butter, Melted Chocolate, Applesauce, Vanilla and Almond Extracts together.
  • Blend the wet ingredients into the dry ingredients and stir with a fork until well mixed. The dough will be crumbly.
  • Cover and refrigerate for 1 hour.
  • Fashion dough by hand into small balls, about 1” in size.
  • Place onto parchment-lined baking sheet.
  • Bake for 15 minutes.
  • Allow to cool completely before removing to a serving plate.
  • Store leftovers in an airtight container at room temperature for 2 – 3 days.
