
Ingredients:
- 3 tablespoons Extra Virgin Olive Oil
- 1 Yellow Onion – Diced
- 1 medium Zucchini – Diced
- 20 Baby Potatoes – Halved
- 5 – 6 Chicken Tenderloins – cut in half
- 1/4 cup shredded Parmesan Cheese.
- 1 tablespoon Soy Sauce
- 1/4 cup Chicken Broth
- 1/2 teaspoon Poultry Seasoning
- 1/4 teaspoon Italian Seasoning
- 1/4 teaspoon Smoked Paprika
- 4 Scallions – cut into small pieces
- 1 teaspoon Kinder’s Blend Seasoning
Directions:
- Preheat oven to 400 degrees.
- Add zucchini, potatoes, yellow onion, and chicken breast into large mixing bowl.
- In a small mixing bowl, olive oil, soy sauce, chicken broth, parmesan cheese, Kinder’s seasoning, and smoked paprika.
- Pour oil and spice blend over chicken/potato/zucchini mixture and mix well by hand until everything is coated.
- Pour into a 9” X 12” disposable aluminum baking pan.
- Bake at 400 degrees for 40 – 50 minutes until golden brown and chicken reaches internal temperature of 165 degrees.
- Sprinkle cut pieces of scallions over dish before serving.
