Chicken and Veggie Bake

Ingredients:

  • 3 tablespoons Extra Virgin Olive Oil 
  • 1 Yellow Onion – Diced
  • 1 medium Zucchini – Diced
  • 20 Baby Potatoes – Halved
  • 5 – 6 Chicken Tenderloins – cut in half
  • 1/4 cup shredded Parmesan Cheese.
  • 1 tablespoon Soy Sauce
  • 1/4 cup Chicken Broth
  • 1/2 teaspoon Poultry Seasoning
  • 1/4 teaspoon Italian Seasoning
  • 1/4 teaspoon Smoked Paprika
  • 4 Scallions – cut into small pieces
  • 1 teaspoon Kinder’s Blend Seasoning

Directions:

  1. Preheat oven to 400 degrees. 
  2. Add zucchini, potatoes, yellow onion, and chicken breast into large mixing bowl.
  3. In a small mixing bowl, olive oil, soy sauce, chicken broth, parmesan cheese, Kinder’s seasoning, and smoked paprika. 
  4. Pour oil and spice blend over chicken/potato/zucchini mixture and mix well by hand until everything is coated.
  5. Pour into a 9” X 12” disposable aluminum baking pan.
  6. Bake at 400 degrees for 40 – 50 minutes until golden brown and chicken reaches internal temperature of 165 degrees. 
  7. Sprinkle cut pieces of scallions over dish before serving.
