Chicken and Potato Bake

Ingredients:

  • 2 Large Baking Potatoes
  •  1 Tablespoon Kinder’s “The Blend” Seasoning
  • 1 Tablespoon Olive Oil + more as needed
  • 1 lb. Boneless Skinless Chicken (breasts or thighs)
  • 1/2 cup Shredded Mozzarella Cheese
  • Fresh Parsley for Garnish (optional)

Directions:

  • Preheat oven to 425° F
  • Lightly coat a large (9×13) baking dish with olive oil.
  • Dice the potatoes in approximately 1/2 inch cubes.
  • In a small bowl, mix the olive oil and Kinder’s Seasoning.
  • Place the potato cubes in a large bowl.
  • Pour the olive oil and seasoning mixture over the potatoes.
  • Toss to coat.
  • Spread potato mixture in dish and bake about 20 minutes.
  • Cut the chicken into bite-size pieces, add to a sauté pan with a little oil, and completely brown the outsides, being careful not to overcook.
  • Remove baking dish from oven and place the chicken pieces in the dish, arranging them evenly in the potato mixture.
  • Bake 35 minutes, until chicken is cooked and potatoes are browned.
  • Sprinkle the mozzarella cheese over the top, return to the oven and bake for a few more minutes to melt the cheese.
  • Before serving, sprinkle chopped parsley on top (if desired) for garnish.
