
Ingredients:
- 2 Large Baking Potatoes
- 1 Tablespoon Kinder’s “The Blend” Seasoning
- 1 Tablespoon Olive Oil + more as needed
- 1 lb. Boneless Skinless Chicken (breasts or thighs)
- 1/2 cup Shredded Mozzarella Cheese
- Fresh Parsley for Garnish (optional)
Directions:
- Preheat oven to 425° F
- Lightly coat a large (9×13) baking dish with olive oil.
- Dice the potatoes in approximately 1/2 inch cubes.
- In a small bowl, mix the olive oil and Kinder’s Seasoning.
- Place the potato cubes in a large bowl.
- Pour the olive oil and seasoning mixture over the potatoes.
- Toss to coat.
- Spread potato mixture in dish and bake about 20 minutes.
- Cut the chicken into bite-size pieces, add to a sauté pan with a little oil, and completely brown the outsides, being careful not to overcook.
- Remove baking dish from oven and place the chicken pieces in the dish, arranging them evenly in the potato mixture.
- Bake 35 minutes, until chicken is cooked and potatoes are browned.
- Sprinkle the mozzarella cheese over the top, return to the oven and bake for a few more minutes to melt the cheese.
- Before serving, sprinkle chopped parsley on top (if desired) for garnish.
