
Ingredients:
- 1 (20-oz.) can pineapple rings in its own juice
- 1 jar dark maraschino cherries
- 1 box yellow cake mix
- 1/4 cup brown sugar
Directions:
- Preheat oven to 350°F.
- Line a 9” x 12” Pyrex baking dish with parchment paper.
- Spray the parchment paper lightly with cooking spray.
- Arrange the pineapple rings and cherries on the parchment in the prepared baking dish.
- Sprinkle brown sugar over the pineapple and cherries.
- Prepare the cake batter per box directions, mixing well by hand and then carefully pour the batter into the baking dish.
- Transfer the baking dish to the middle rack of the oven.
- Bake until the top is golden brown and a toothpick comes out clean – about 45 minutes.
- Carefully invert baking dish onto a cutting board or platter to remove cake; peel away and discard parchment paper. Let cool 15 to 30 minutes. Slice and serve.
