Cheesy Potatoes

Ingredients:

  • 2 large baking potatoes – cut in 1/8” slices
  • 1 medium onion – sliced thin
  • 12 teaspoon sea salt
  • 18 teaspoon  pepper
  • 12 cup vegetable broth
  • 34 cup Shredded Cheddar Cheese

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Layer a 9” x 12” baking dish with potatoes and onions.
  3. Pour vegetable broth evenly over the potatoes and onions.
  4. Sprinkle cheese, salt, and pepper over mixture.
  5. Cover baking dish tightly with aluminum foil.
  6. Bake for 45 minutes, then uncover, change setting to “broil” (500 degrees), and bake for another 5-8 minutes.
  7. Remove from oven and let stand (covered) for 10 minutes before serving.
