
Ingredients:
- 2 large baking potatoes – cut in 1/8” slices
- 1 medium onion – sliced thin
- 1⁄2 teaspoon sea salt
- 1⁄8 teaspoon pepper
- 1⁄2 cup vegetable broth
- 3⁄4 cup Shredded Cheddar Cheese
Directions:
- Preheat the oven to 350 degrees F.
- Layer a 9” x 12” baking dish with potatoes and onions.
- Pour vegetable broth evenly over the potatoes and onions.
- Sprinkle cheese, salt, and pepper over mixture.
- Cover baking dish tightly with aluminum foil.
- Bake for 45 minutes, then uncover, change setting to “broil” (500 degrees), and bake for another 5-8 minutes.
- Remove from oven and let stand (covered) for 10 minutes before serving.
