Mexi – Bake Casserole

Ingredients:

  • 1-pound Lean Ground Turkey
  • 1 Medium Yellow Onions – Diced
  • 1 can, (14.5 ounce) Rotel (mild)- undrained
  • 1 can, (16 ounces) Black Beans – drained
  • 1 packet Taco Seasoning
  • Salt and Pepper – to taste
  • 2/3 cup Water
  • 2 – 3 Cups Cooked Rotini Pasta
  • ½ – ¾ Cup Shredded Mexican Cheese Blend

Directions:

  1. Begin by cooking Turkey in a 3 quart sauté pan over medium-high heat.
  2. Add the onions to the Ground Turkey, stirring until meat is nicely browned.
  3. Reduce heat to Medium, then Stir in the Salt, Pepper, Taco Seasoning, Water , Beans, and Rotel.
  4. Continue Stirring over Medium heat for 5 minutes.
  5. Add the Pasta and transfer to an 8”x 8” baking dish.
  6. Cover mixture with cheese – to taste.
  7. Put into a preheated oven (350 degrees) and bake for 45 minutes and Cheese is nicely browned.
  8. Serve immediately.
