
Ingredients:
- 1-pound Lean Ground Turkey
- 1 Medium Yellow Onions – Diced
- 1 can, (14.5 ounce) Rotel (mild)- undrained
- 1 can, (16 ounces) Black Beans – drained
- 1 packet Taco Seasoning
- Salt and Pepper – to taste
- 2/3 cup Water
- 2 – 3 Cups Cooked Rotini Pasta
- ½ – ¾ Cup Shredded Mexican Cheese Blend
Directions:
- Begin by cooking Turkey in a 3 quart sauté pan over medium-high heat.
- Add the onions to the Ground Turkey, stirring until meat is nicely browned.
- Reduce heat to Medium, then Stir in the Salt, Pepper, Taco Seasoning, Water , Beans, and Rotel.
- Continue Stirring over Medium heat for 5 minutes.
- Add the Pasta and transfer to an 8”x 8” baking dish.
- Cover mixture with cheese – to taste.
- Put into a preheated oven (350 degrees) and bake for 45 minutes and Cheese is nicely browned.
- Serve immediately.
