“Campfire Potatoes” Made in the Oven.

Ingredients:

  • 2 large baking potatoes – cut in 1/8” slices
  • 1 medium onion – sliced thin
  • 12 teaspoon sea salt
  • 18 teaspoon  pepper
  • 12 cup vegetable or chicken broth
  • 34 cup Shredded Cheddar Cheese

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Layer a 9” x 12” baking dish with potatoes and onions.
  3. Pour broth evenly over the potatoes and onions.
  4. Sprinkle cheese, salt, and pepper over mixture.
  5. Cover baking dish tightly with aluminum foil.
  6. Bake for 40 minutes, then uncover, change setting to “broil” (500 degrees), and bake for another 5-8 minutes.
  7. Remove from oven, recover, and allow to rest for 10 minutes before serving.
