Banana Nut Cookies


Ingredients:

  • 2 Ripe Bananas – Mashed
  • 1 1/2 Cups All Purpose Flour
  • 1/2 Cup Sugar
  • 1/4 Cup Butter – Melted
  • 1/4 Cup Chopped Pecans
  • 1 tsp Vanilla
  • 1 Beaten Egg
  • 1 tsp Baking Soda

Directions:

  • Preheat Oven to 375 degrees.
  • Place the egg, vanilla, pecans, and sugar in a small bowl and blend together well.
  • Place remaining dry ingredients in a large bowl and use a whisk to thoroughly mix together.
  • Add the contents of the small bowl into the large bowl , add banana pulp and stir until all is mixed well.
  • Drop ice cream scoop size portions of dough onto a lined baking sheet, about 2 inches apart.
  • Sprinkle a pinch of sugar on each.
  • Bake for 12- 16 minutes or until a toothpick comes out clean.
  • Allow bread to cool for 15 minutes before removing to a serving plate.
